Rustic Winter Dinner
Today was a great ski day. After coming back from a long day on the slopes though, the last thing I want to do is spend hours in the kitchen (although I am known to do so). So I decided on something healthy and quick (30 minutes total, 10 minutes of which is the extra time waiting for the water to boil and pasta to cook since in the mountains things take a little longer). I boiled whole wheat penne, sauteed some garlic, onions and tomatoes, and tossed it all with a simple tomato sauce. I also made a quick spinach salad with manchego cheese, pumpkin seeds, and an olive oil and mustard vinaigrette. We paired it with a spicy zinfandel and curled up in front of the fire for a rustic winter evening. Healthy can be simple, quick and gourmet. Such qualities are not mutually exclusive. The wine was a recent hostess gift – Rosenblum Cellars Zinfandel, Vintner’s Cuvee XXX. Lots of dark berries and good amount of spice. A great every-day pasta wine.
