Superfood: Walnuts

Walnuts:

Juglans (with 21 different species)

You rarely see whole walnuts in the stores these days; most of the time they have already been shelled.  Walnuts contain high levels of antioxidants, fiber, B vitamins, magnesium and Vitamin E.   Also, nuts in general contain alot of omega-3’s, which are well known to help thin blood, help with flow and prevention of clots in vessel walls.  Walnuts have higher amounts of omega 3 fatty acids compared to other nuts.   Besides protecting you from cancer and heart-disease, omega 3 fatty acids are said to ensure healthy skin and hair.

Why are walnuts a superfood?

  • Highly concentrated protein
  • Contain plant sterols
  • Help reduce the incidence of the following:
    • Coronary heart disease
    • Diabetes
    • Cancer

My favorite way to enjoy walnuts?  Candied with pungent blue cheese on a bed of dark leafy greens.   I also made unique walnut encrusted halibut fillets for V-Day Dinner.  Post on that coming soon (just as soon as the pics get downloaded).

    I noticed it this year too. Not many walnuts out at Christmas time. I like to buy bags of nuts for snacks. It keeps me busy shelling and eating them too.

    Snacking, in salads, in popcorn, crusted on meat/or fish – I agree, walnuts are great in every way!
